Aged for 12 months. The beeswax surrounding the cheese provides a nice moistness to the paste, which is rarely the case for cheeses aged for several months. This unusual texture makes San Pietro unique. The wax coating of the wheel is done early in production. It has an ivory-colored paste and a hard yellow rind. It is characterized by pleasant aromas of vanilla and honey. The sweet crust of the cheese provides a superb balance to the spicy contents of such an aged cheese.
