At 20–22 months of age, Isigny Sainte-Mère Mimolette is a robust, complex, and mature cheese. It is known for its intense nutty and savory notes, balanced by hints of caramel and a distinctive bitter finisIts natural rind is grey in colour and rugged looking, resulting from the actions of harmless cheese mites. The orange colour of the paste is due to a natural colorant called anatto.
