Marquis de Témiscouata
This soft, bloomy-rind cheese is made from pasteurized milk sourced exclusively from Jersey cows from the Témiscouata region. Its rind is covered with white down, revealing small orange-brown streaks. It offers a mild aroma of mushroom and butter. Its pale yellow paste is supple and smooth, becoming creamy and runny from the rind toward the center. At maturity, it becomes very rich and creamy due to the higher fat content in this type of milk. When young, the paste has a mild creamy flavour, which matures to a buttery taste, and the rind adds a wild mushroom flavour.
