After several months of collaboration with Philippe Delin, the classic red Château de Bourgogne now has its blue version a subtle touch of Bleu d'Auvergne in the middle. The mix of the brillat and the blue reveal a perfect balance between those 2 well known cheeses. The Château de Bourgogne is produced by the Delin creamery in Bourgogne. This second-generation family owned business has always refused to introduce new technologies at the detriment of flavour.
